Tomato Tortellini Frittata
INGREDIENTS
- 12 egg whites, whisked until frothy
- 1 cup cheese tortellini
- 1 cup grape tomatoes, quartered
- 1/2 cup shredded Parmesan cheese
DIRECTIONS
Preheat oven to 375 degrees.
In your KitchenAid Stand Mixer with whisk attachment, beat egg whites until frothy.
Cook tortellini to al dente according to package directions.
In a greased 12” oven safe skillet over medium heat, add grape tomatoes and cook until warmed through.
Add cheese tortellini to skillet, insuring that tortellini and tomatoes are in a single layer.
Pour egg whites over tortellini and tomatoes and cook until just set.
Bake for 10-15 minutes or until set.
Sprinkle with Parmesan cheese and allow to sit for 10 minutes before cutting into wedges and serving.
